Healthy Oatmeal Muffins for Christmas!

The holiday season is upon us, and with it comes a plethora of delicious food and festive cheer. But amidst the hustle and bustle of the holidays, it’s important to remember to stay healthy and make nutritious choices. Together with The Wisconsin Department of Public Instruction (DPI), Fresh & Safe is committed to providing fresh, healthy, and affordable food to the Milwaukee community through our meal programs. In fact, we wanted to offer you a tasty treat and will take you through the process of baking a Oatmeal Muffin Recipe!

DPI has designated December as a month to focus on healthy eating and nutrition. Throughout the month, DPI will be focusing on a variety of foods and activities to promote healthy eating habits. Some of the December focus areas are:

DPI’s National Monthly Highlights:

  • National Pear Month: Pears are a delicious and nutritious fruit that are packed with vitamins and fiber. Celebrate National Pear Month by enjoying pears in your favorite recipes or simply eating them fresh.
  • National Root Vegetable Month: Root vegetables are a great source of vitamins, minerals, and fiber. Celebrate National Root Vegetable Month by enjoying some delicious root vegetables.

National Oatmeal Muffin Day (December 19): Oatmeal muffins are a healthy and satisfying breakfast or snack option. Celebrate National Oatmeal Muffin Day by baking up a batch of your favorite muffins.  Enjoy this simple recipe from Fresh and Safe for oatmeal muffins that you can enjoy on National Oatmeal Muffin Day:

Oatmeal Muffin Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup packed light brown sugar
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a muffin tin with cooking spray or butter.
  • In a large bowl, whisk together flour, oats, baking soda, salt, and cinnamon.
  • In a separate bowl, whisk together brown sugar, milk, vegetable oil, egg, and vanilla extract.
  • Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
  • Fill muffin tins 2/3 full of batter.
  • Bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean.
  • Let muffins cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
